காலிஃப்ளவர் மஞ்சூரியன் (Gobi Manchurian Dry)
Gobi Manchurian is an Indian Chinese fried cauliflower dish. Gobi Manchurian is the result of the adaptation of Chinese cooking and seasoning techniques to suit Indian tastes. Generally cauliflower, chopped onion, capsicum, garlic are the main ingredients sautéd in soy sauce and chili sauce. There are dry and gravy type varieties in this recipe.
Ingredients for Gobi Manchurian
For Frying
Cauliflower – 1 medium size
Besan – 1/4 cup
Corn flour – 1/4 cup
All purpose flour – 1 tbs
Chilli powder – 1 tbsp
Pepper powder – 1 tsp
Cumin powder – 1 tsp
Salt as needed
For Manchurian
Fried cauliflower – 2 cups
Ginger – 3/4 tsp (chopped)
Garlic – 4 (minced)
Spring onion whites – 2 tbs (chopped)
Onion – 1/4 cup (finely chopped)
Ketchup/Tomato sauce – 1.5 tsp
Soy sauce – 1.5 tsp
Corn flour – 1 tsp
Chilli sauce – 1 tsp (optional)
Green bell pepper/ Capsicum – 1/4cup (chopped)
Black pepper powder – 3/4 tsp
Spring onion green for garnish
Salt as needed
Directions
Fry Cauliflowers
Cut the bigger stem off the cauliflower and take the florets in a mixing bowl with salt.
Boil some water in high flame and pour that into the mixing bowl which have the cauliflower
Leave the cauliflower for 10 minutes then strain the water.
Now add all the other ingredients and mix well, no need to add water.
Check the salt level and add some salt again if needed.
Heat oil in a frying pan in medium flame.
Add batter coated cauliflower little by little with a help of a spoon.
After 2 minutes flip the florets to the other side.
When the bubbling stops, take out.
Prepare Manchurian
Keep 1 tbsp of oil in the same cauliflower fried pan and transfer the excess oil.
Add the ginger, garlic, spring onion whites, bell pepper and onion.
Sauté them for a minute and add soy sauce, ketchup then mix well.
Now reduce the flame into low.
Mix corn flour and 1 tbs of water in a small bowl then pour that to pan.
Add enough water and salt then mix everything well.
Now add fried cauliflower and mix until all the spices are well coated.
Garnish with green onions.
Gobi Manjurian ready.
Serve the Gobi Manchurian with Fried rice or any variety rice.
Notes
Don’t add corn flour directly to the pan as it makes lumps.
If you want more spiciness, add more amount of chilli sauce. I used green chilli sauce here.
You may serve this as Starter too.
