Roasted Red Pepper Pasta

குடை மிளகாய் பாஸ்தா (Roasted Red Pepper Pasta)

Roasted red bell pepper pasta is an Indian spicy version of pasta. Best quality red bell pepper gives good taste to this recipe. I prepare this pasta only when I get to buy best red bell pepper. Sauce making process takes some time but it’s worth to spend. Roasting capsicum over stove top gives a smoky flavor. Since we remove the outer layer, smoky flavor doesn’t dominate the recipe. My whole family is addicted to this recipe.

Ingredients for Roasted Red Pepper Pasta

Pasta – 4 cups
Red bell pepper – 3 big
Tomato – 4
Garlic – 5 (minced)
Cashews – 10 (crush into small pieces)
Black pepper – 2 tsp
Cumin powder – 2 tsp
Red chilli flakes – 2 tsp + drizzle 
Olive oil – 3 tbsp 
Parmesan cheese – 1 cup
Cheese slice – 3 (Optional)
Salt as needed 

Directions

Roast Red bell pepper

Rinse the red bell pepper with water.
Dry the red bell pepper with cloth or paper towel. 
Apply little bit of oil over the pepper.
Place the red bell pepper on the burner.
Flip the pepper and roast all the sides.
After completely roasted, wash the pepper in running water. 
Remove the burned skin and seeds from red bell pepper. 
Chop the red bell pepper into small pieces.

Prepare Sauce

Heat oil in a pan and add minced garlic, cashews. 
Add the chopped tomatoes and sauté them until mushy. 
Now add cumin powder, pepper powder, red chilli flakes and salt. 
Mix everything well and add chopped bell pepper. 
Let the mix cools down completely. 
Blend the sautéd ingredients into fine paste.
Pasta Sauce ready.

Cook Pasta

Add pasta, water and salt in a pan. 
Boil the pasta until cooked. 
Drain the water out.

Serve Pasta

Pour pasta sauce over the cooked pasta. 
Drizzle some chilli flakes. 
Add the shredded cheese and cheese slices. 
Mix everything well. 
Roasted red bell pepper pasta ready.
Serve the pasta in a bowl.

Notes

Spiral pasta goes well with this sauce, you may try different pasta too.
You may use mozzarella cheese as well for this recipe. 
Adding cheese slice at the end does not melt it completely and that gives nice cheesy texture.
