Authentic homemade Bombay Halwa recipe

பாம்பே அல்வா – Bombay Halwa

Bombay halwa is a chewy, glossy and translucent sweet made from cornstarch, sugar and ghee flavoured with cardamom and garnished with nuts. It has a unique jelly like texture that becomes firm and sliceable after cooling. This recipe takes very less time to cook and easy to cook. Beginners can try this recipe. This is also called Karachi Halwa.

Ingredients for Bombay Halwa

Corn starch – 1/2 cup
Sugar – 1 1/4 cup
Ghee – 6 tbs
Cashew nuts – 1/4 cup
Lemon juice – 1/2 tsp
Cardamom powder – a pinch
Red food colour – a pinch

Directions

Pre-preparation

Take corn starch in a bowl and pour 1 cup of water little by little and mix without any lumps.
Chop the nuts into small chunks

Cooking

Take a pan and add sugar and 1 cup of water.
Boil the sugar and water mix until the sugar dissolves completely. 
No need to check for any consistency. 
Now add lemon juice and mix well.  
Change the flame to medium.
Add cornstarch and water mix into the sugar syrup little by little. 
Stir continuously without taking hands to avoid halwa sticking in the bottom. 
Now add ghee little by little. 
It will take 10-15 minutes to get the consistency .
Finally add the chopped nuts and food colour. 
Mix until both mix completely. 
When you’re taking the halwa with the spatula, it will come completely without sticking in the pan. This is the right consistency.
Stop the flame.
Transfer the halwa into a ghee greased pan.
Let it sit for at least 1 hour. 

Halwa

Flip the pan gently to transfer the halwa to a tray or plate.
Slice the halwa into small pieces. 
Bombay halwa ready.

Notes

You may use any nuts and any food colour for this recipe.
Adding lemon juice helps avoid crystals forming in sugar syrup.
