வெஜ் நூடுல்ஸ் – Veg Noodles

Veg noodles is a kids favorite recipe. I got this recipe from one of our friend, he gave some tips. I just follow the tips and got awesome result. This recipe is perfect for kids party, potluck as well.

Ingredients for Veg Noodles

Hakka noodles – 200g
Onion – 1/2 chopped 
Cabbage – 1 cup (thin sliced)
Egg – 2
Carrot – 1 
Beans – 10
Pepper – 1 tsp 
Chilli flakes – 1 tsp
Ginger garlic paste – 1/2 tbs
Soya sauce – 1 tsp 
Oil – 2 tbs
Salt as needed 

Directions

Pre-preparation

Cook the noodles with salt and water. 
Peel off the carrot skin and chop into small pieces. 
Chop the beans into small pieces. 
Cook the beans and carrot with salt and water. 

Scramble eggs

Heat wok or pan with oil.
Crack the eggs in a bowl.
Add salt and one tsp water then beat the eggs fluffy. 
Pour the beaten eggs into the pan.
Add half of the chilli flakes and pepper. 
Scramble the eggs into small pieces.

Toss Vegetables

Add the chopped onion and ginger garlic paste. 
Sauté them for a minute and add the sliced cabbage. 
Stir fry the cabbage for a minute.
Add the boiled carrot and beans. 
Now add the remaining pepper, chilli flakes, salt and soya sauce. 
Mix everything well and add the cooked noodles. 
Toss the noodles until the veggies well mixed.
Veg noodles ready.
Serve the noodles with tomato sauce/ ketchup. 

Notes

Don’t over cook the veggies. 
If you don’t want egg in this recipe, add some more oil for moisture. 
If you don’t have wok, close the pan or pot with lid and toss with two hands without breaking the noodles.
