பூண்டு மிளகாய் பொடி (Poondu Milagai Podi – Garlic Chili Powder)
Poondu milagai podi is a healthy recipe. I never liked to taste Poondu podi in my childhood days but after become health conscious, I decided to give it a try. The main ingredients of this recipe are garlic and black urad dal, both are good for health. Black urad dal is a good source of fiber and protein. Garlic control cholesterol, good for gas trouble and maintaining blood pressure.

Ingredients for Poondu Milagai Podi
Garlic – 1 cup (crushed)
Black urad dal – 1/2 cup
Channa dal – 1/2 cup
Sesame seeds – 1/4 cup
Coriander seeds – 1 tsp
Cumin seeds – 1 tsp
Dry red chilli – 16
Curry leaves – 2 spring
Oil – for roasting
Salt as needed
Directions
Peel the skin off the garlic and crush that partially.
Take a pan and add little bit of oil and roast the black urad dal.
Transfer the roasted dal into a plate.
Again add oil and roast channa dal, sesame seeds, coriander seeds, dry chilli and curry leaves separately.
Now add 2 tbsp oil and roast crushed garlic until it becomes crispy.
Let the roasted ingredients cools down completely.
Transfer the ingredients into a blender jar and add salt.
Blend the roasted ingredients into coarse powder.
Transfer the ground powder into a plate and let it cools down.
Poondu milagai podi ready.
Store the podi in an air tight container for long lasting aroma / taste.
Serve this podi with idly, dosa, Adai.
Notes
Don’t over roast the ingredients otherwise it gives bitter taste.
You can also use skin removed (white) urad dal instead of black urad dal.
You may use white sesame seeds instead of black sesame seeds.
Don’t over crush the garlic.

Take out and keep it in a plate 
Add little oil again 
Put chana dal 
Fry until color changes 
Take out and put in plate 
Pour drop of oil again 
Add sesame 
Fry sesame until it pops 
Dry fry red chili 
Also dry fry cumin and coriander 
Crush garlic gently 
Don’t crush too much 

Take 2 tbsp oil in a pan 
Fry garlic 
Take out when color changes 
Fry curry leaves as well 
Add everything in a mixie jar and blend well 
Poondu milakai podi ready 
Transfer to a plate and let it cool down 
Store it in a silver or glass container
