கல்யாண வீட்டு வாழைக்காய் வறுவல் – Kalyana veetu valakkai varuval

Kalyana veetu valakkai varuval is a spicy and crispy side dish which is specially served in feast. This varuval is prepared with ground spices. This recipe is easy to prepare and take very less time to cook. This is one of my family’s all time favorite recipe.

Ingredients for Kalyana veetu valakkai varuval

Valakkai – 1
Pepper – 1/2 tsp
Cumin seeds – 1/2 tsp
Fennel seeds – 1/4 tsp
Garlic – 4 – 5 pods
Curry leaves – 2 spring
Masala – 1/4 tbs
Turmeric – 1/4 tsp
Salt as needed

Directions

Cut Plantain

Peel off the plantain’s skin.
Slice the the plantain into lengthwise pieces.
Transfer all the sliced pieces into a bowl.
Pour water into the plantain pieces (to avoid color changing).

Other Preparation

Grind the pepper, cumin and fennel seeds.
Add garlic and one spring curry leaves into mixer.
Grind the spice into coarse paste with adding little bit of water.
Filter the water from the plantain and sprinkle salt then mix well.

Fry Plantain

Heat oil in a pan and add plantain pieces.
Fry the plantain pieces and take out.
Fry all the remaining pieces.

Prepare Varuval

Keep 2-3 tsp oil in the pan and remove the remaining oil then keep the flame low.
Add the ground spices and masala, turmeric and salt into the pan.
Sauté them for a minute then add all the fried plantain pieces.
Mix the ground spices and plantain well.
Change the flame into medium and roast the plantain for 3-5 minutes.
Switch off the flame.
Kalyana veetu valakkai varuval ready.

Notes

Don’t fry the plantain crispy, it will become hard when sauté.
