காரச் சட்னி – Kaara Chutney

Kaara chutney is a spicy chutney famous in chettinad cuisine which is prepared by using onion, tomato, dry red chilli and garlic. This kara chutney is the best combination for paniyaram, idly and set dosa. It is easy to prepare and take very less time only.

Ingredients for Kaara Chutney

Small onion – 1/2 cup(chopped)
Tomato – 2 big
Sesame oil – 1 + 2 tbs
Dry red chilli – 12 + 3 
Ginger – small piece
Garlic – 7-8 pods
Curry leaves – 1 + 1 spring 
Cilantro  – 1/4 cup
Mint – 1/4 cup
Turmeric powder – 1/4 tsp 
Chilli powder – 1/2 tsp
Mustard seeds – 1/4 tsp 
Urad dal – 1/2 tbs
Salt as needed 

Directions

Heat 1 tbs of oil in a pan then add ginger pieces and garlic pods. 
Sauté them a little then add curry leaves, 12 dry red chilli and chopped onion.
Stir fry the onion and add chopped tomato. 
Sauté the tomatoes until mushy. 
Add red chilli powder, turmeric powder and salt. 
Mix everything well then add cilantro and mint.
Stir fry until the leaves shrink.
Let the mixture cool down completely. 
Transfer the mixture into a blender jar. 
Blend the mixture into fine paste by adding little water. 
Heat remaining oil and add mustard seeds & urad dal.
Once seeds pop, add curry leaves and 3 dry red chilli. 
Stir fry the ingredients and pour the ground chutney and mix well.
Switch off the flame. 
Kaara chutney ready. 
Serve the chutney with paniyaram / idly / dosa.

Notes

You may use big onion as an alternative for small onion. 
According to your spice level, adjust the dry red chilli count.
