ஆட்டுக்கால் பாயா / ஆட்டுக்கால் குழம்பு (Goat Leg Gravy / Attukal Paya)
Goat Leg Gravy is a famous South Indian recipe usually goes with appam. Goat leg is used for preparing soup as well. This has plenty of health benefits. The trick in this recipe is in the roasting and cooking goat leg only. Follow recipe to get a best mouthwatering taste every time!
Ingredients for Goat Leg Gravy
Goat leg – 250gm
Small onion – 1/2 cup (chopped)
Tomato – 1
Ginger garlic paste – 1 tbs
Masala – 1.5 tbs
Chilli powder – 1 tbs
Pepper powder – 2 tsp (crushed)
Cumin powder – 2 tsp (crushed)
Turmeric powder – 1/4 tsp
Curry leaves – 1 spring
Dry red chilli – 2
Cumin seeds – 1 tsp
Sesame oil – 3 tbs
Salt as needed
Grinding Ingredients
Coconut – 1/3 cup
Cinnamon stick – 1 small
Fennel seeds – 1/4 tsp
Directions
Clean Goat Leg
Use knife and scrape the burnt layer.
Soak the scraped legs in turmeric water for 30 minutes.
Rinse the legs with water 3 times.
Cook Goat Leg
Place the cleaned legs in a pan.
Add enough water and add salt, turmeric powder.
Slow cook for 8 hours.
Prepare Gravy
Heat oil in a pan and add cumin seeds and curry leaves.
After the leaves popped, add dry red chilli, chopped onion and ginger garlic paste.
Stir them well and add chopped tomatoes.
Sauté them until mushy and change the flame into low.
Add masala, chilli powder, turmeric powder, pepper powder, cumin powder and salt.
Grind all the grinding ingredients into fine paste.
Mix everything well and add ground coconut paste.
Pour 1 cup of water and change the flame into high.
Close the lid and boil the gravy for 5 minutes.
Add the cooked leg with boiled water.
Mix the gravy well and boil the gravy again for 5 minutes.
Change the flame into low and allow the gravy to emit oil for 5 minutes.
Attukaal paya ready.
Notes
If the leg is not roasted in fire, first roast the leg in fire before start cleaning process.
Ask the butcher to cut the bone to small pieces, so that it cooks easily.
Don’t pressure cook or cook in high flame.
Slow cooking gives the perfect taste.
If you have slow cooker, cook the leg in slow cooker for whole night in high setting.
If you’re cooking in stove top, add enough water to a pan and cook with closed lid; Keep the flame very low and cook whole night or at least 5 hrs during the day.
