Double Ka Meetha

Double ka meetha is a bread pudding Indian sweet of fried bread slices soaked in hot milk with spices, including saffron and cardamom. This is a dessert of Hyderabad state. It is popular in Hyderabadi cuisine, served at weddings and parties. Double ka meetha refers to the milk bread, called “double roti” in the local Indian dialects because it swells up to almost double its original size after cooking.

Ingredients for Double Ka Meetha

Bread – 12 slices 
Milk – 500ml (2.5 cups)
Sugar – 200g (1 cup)
Sweetened condensed milk – 1 tin (14 oz)
Saffron – 20 strings
Mixed nuts – 1.5 tbs
Ghee – 3 tbs
Orange food coloring (optional)
Oil for frying 

For Garnish (Optional)

Palkova – 50g
Mixed nuts

Directions

Bread Frying

Spread the breads all over the plate. 
Dry the bread for 30 minutes in sunlight or under fan.
Cut the bread slices into 4 pieces. 
Heat oil and ghee in a frying pan. 
Keep the flame in medium. 
Fry all the bread slices into golden brown. 

Rabdi

Heat milk in a pan until raises.
Reduce the flame into medium and add saffron. 
Pour condensed milk and add mixed nuts. 
Mix everything well and cook the mixture until thick (5 minutes).

Sugar Syrup

Heat sugar and 1/2 cup of water in a pan. 
Add little saffron.
Stop the flame when the syrup reaches one string consistency. 

Prepare Meetha

Arrange the fried bread slices in a big pan as shown in picture. 
Pour half of the rabdi over the bread. 
Also pour the sugar syrup and cook the bread for 8-10 minutes in full flame.
Now pour the remaining rabdi and cook for another 5 minutes in medium flame. 
Switch off the flame and garnish meetha with palkova and mixed nuts. 
Double ka meetha ready. 
Serve the meetha as dessert. 

Notes

Don’t skip the bread drying step otherwise the bread’s moisture will observe more amount of oil.
Flipping the bread sides while drying helps to dry the bread completely. 
Palkova (200g) can be used as alternative for condensed milk in rabdi preparation. 
You may add cardamom too for this recipe during rabdi preparation.
I used multi grain bread, you may use white/ wheat bread too.
Mixing oil and ghee while frying gives rich flavor for bread.
