Authentic Dry Ghee Chicken Sukka

நெய் சிக்கன் சுக்கா – Dry Ghee Chicken Sukka

Dry ghee chicken sukka is a spicy and dry recipe. I already posted a recipe for chicken sukka. But this version is dry and need less ingredients. Also an easy to cook and this is a beginners friendly recipe. I tried this recipe and the result was awesome. Within few minutes our family finished everything. It’s perfect to eat with rice or have this as appetizer.

Ingredients for Dry Ghee Chicken Sukka

Chicken with bone – 1 kg
Ginger(crushed) – 2 tbs
Garlic (crushed) – 3.5 tbs
Chilli powder – 3 tbs
Cumin powder (crushed)  – 2 tbs
Turmeric powder – 1/2 tsp
Kashmiri chilli powder/ red food colour – as needed (optional)
Red chilli – 2
Sesame oil – 1/2 cup
Ghee – 1/2 cup
Cashews – 1/4 cup
Curry leaves – handful 
Salt as needed

Directions

Rinse the chicken in water.
Add the cleaned chicken into a pan.
Heat the pan in medium flame.
Cook the chicken for 5 minutes (no need to add salt at this time).
Now you can see the water emits from the chicken. 
Collect the water in a separate bowl (we don’t need this water for this recipe, this is chicken stock).
Now add salt, turmeric powder, chilli powder, sesame oil, dry red chillies, crushed ginger one by one and mix everything well.
When chicken cooked half way, add cumin powder, crushed garlic and mix well.
Add the cashews and curry leaves. 
Stir fry the chicken in medium flame.
When the chicken cooked completely, drizzle the ghee and stir the chicken until it blends everywhere.
Dry ghee chicken sukka ready.

Notes

Add the Kashmiri chilli powder/ food colour, when you add the chilli powder if you want.
Don’t use ginger garlic paste; Use crushed ginger and garlic for better texture/ result.
