Aloo Paratha

ஆலு பரோட்டா (Potato Stuffed / Aloo Paratha)

Aloo paratha is a potato stuffed wheat bread. This is a North Indian recipe, especially originated from Punjab. My kids like this stuffed paratha very much. In traditional recipe they add green chili and cilantro but my kids doesn’t like them. So I avoided those in this recipe.

Ingredients for Aloo Paratha

Chapathi dough – 6 balls
Potato – 2 medium (cooked and mashed)
Garam masala – 3/4 tsp
Turmeric – 1 pinch
Coriander powder – 1 tsp
Cumin powder – 1/2 tsp
Ajwain – 1 pinch
Oil – 1 tsp + cooking 
Salt as needed 

Directions

Heat 1 tsp oil in a pan and switch off the flame. 
Crush the ajwain and put it in warm oil.
Add all the spices and salt in the pan then mix well.
Now add the mashed potato and coat the spices all over.
Take one ball dough and dust with flour.
Roll the dough into small round.
Place one small size spiced potato stuffing in the middle. 
Close the stuffed potato with the dough as shown in picture. 
Roll the dough into thick round shape patty. 
Heat dosa pan and add the patty. 
Apply oil over the paratha and in a minute, flip to other side.
Again apply oil on the other side and cook until both side turns into golden brown color. 
Stuffed paratha ready.
Serve the Aloo Paratha with raita, chutney, butter or pickles.

Notes

Don’t over stuff the paratha, otherwise when you roll the paratha, stuffing will come out. 
You may cook this paratha with ghee too.
In traditional recipe they just mix all the stuffing ingredients in a mixing bowl, I just want to remove the raw masala smell so that I mix everything with warm oil.
Knead the dough soft and rest that for at least 30 minutes for best results. 
Add little bit of salt to the potato while cooking.
