Badam Milk

பாதாம் பால் (Badam Milk)

Badam milk is a healthy Indian drink where almonds are blended with milk and flavored with saffron and cardamom. It’s a delicious drink and easy to prepare dessert as well. This is very popular in India. Whenever I go to courtallam, I never miss to taste this, after taking bath in the falls. Warm badham milk usually available in evening and night time in street side of courtallam. 

Serves 4

Ingredients for Badam Milk

Whole milk – 3 cup
Badham milk powder – 1/2 cup
Sugar – 1/4 cup

For Garnish (Optional)

Sliced Almond – 1 tbs
Sliced Pistachios – 1 tbs
Saffron – 8 strings

Directions

Take a big wok or pan and pour the milk.
Boil the milk in full flame.
Add sugar and mix well until completely dissolved. 
When milk starts to raise, reduce the flame into medium. 
Add the badham milk powder and mix well.
Cook the milk until the badam powder’s raw smell goes off. 
Collect the milk layers around the wok and add to the milk in the middle.
Switch off the flame. 
Move the milk layers to one side and use a ladle to scoop milk.
Pour the badham milk into a serving glass. 
Now take milk layer and put on top of badaam milk.
Garnish the milk with sliced nuts and saffron. 
Serve the badam milk hot or keep it in refrigerator and serve as a cold dessert as well.

Notes

3 cups milk reduces into 2 cups.
I used homemade badam milk powder, you may use store bought powder for this recipe too.
You may also use reduced fat milk for this recipe. 
You may use 2 cups of whole milk and 1 cup of water for diluted badham milk.
