Vegetable Fried Rice

வெஜிடபிள் பிரைட் ரைஸ் (Vegetable Fried Rice)

Vegetable fried rice is a dish of cooked rice that has been stir fried in a wok or a frying pan that usually mixed with ingredients such as half cooked veggies, soy sauce and white pepper powder.  Fried rice is originated from China and there are many variations in the recipe. In childhood days this Indian style vegetable fried rice is one of my favorite. It takes very less time to cook this recipe.

Ingredients for Veg Fried Rice

Basmati rice – 1.5 cups 
Beans – 1/3 cup (chopped)
Carrot – 1/2 cup (chopped)
Soy sauce – 1 tsp 
White pepper powder – 1 tsp
Oil – 3 tbs
Ghee – 1/2 tbsp (Optional)
Onion – 1/3 cup (chopped)
Green onion – 1 tbs
Salt as needed 

Directions

Cook Rice

Soak the rice in water for 30 minutes. 
Cook the rice with salt, water and 1/2 tsp oil.
Stop the flame when the rice just cooked. 
Filter the water out.
Place the cooked rice over a dry cloth. 

Seasoning Vegetables

Half cook the chopped carrot and beans. 
Pour oil in a wok or pan.
Spread oil all over the pan. 
Add the chopped onion and sauté just a minute. 
Now add the cooked veggies, salt and sauté another minute.

Make Fried Rice

Add the cooked basmati and mix well. 
Pour soy sauce and white pepper then give a mix. 
Garnish with chopped green onion. 
Vegetable fried rice ready.
Serve the vegetable fried rice with Cauliflower Manchurian

Notes

Don’t over cook veggies and rice. 
Using enough oil is an important thing in this recipe. 
I’m using dark soy sauce for this recipe, you may use light soy sauce too.
Light soy sauce and white pepper powder gives white color to the fried rice. 
Don’t add more veggies to this recipe.
