Butter (softened) – 2 tbs
Sesame seeds – 1 tbsp
Channa dal – 3 tbsp
Green chilli – 4
Ginger – 1 big piece
Asafoetida – 1/4 tsp
Curry leaves – 2 spring
salt as needed

Directions

Pre-preparation:

Soak the rice for at least 2 hrs and grind the rice into fine paste
Soak the channa dal for 30 mins
Powder the fried split channa dal (porikadalai) in a blender
Grind the ginger and green chilli in a blender separately until fine paste and then add curry leaves into the blender and blend it for few seconds

Prepare the dough:

Take the rice batter in a mixing bowl; Add the ginger mix, sesame seeds, asafoetida, soaked channa dal, Split channa dal powder, butter and salt.
Mix everything thoroughly, if necessary add little bit of water to make it as a soft dough

Prepare Thattai:

Now take small amount of dough and shape it into small balls
Take a plastic sheet and apply little bit of oil (so that it won’t stick)
Press the small ball dough in the plastic sheet into circle shape and make some holes with the help of a fork.
Flip the plastic sheet and take the spread dough in hand and put it into the hot oil
Fry that for a minute (or when you see golden brown in corners) and flip it
Take the batch out when the bubbles stop

Notes

For best results fry this in a flat bottom pan
If you don’t like green chilli, replace it with red chilli powder
