Spicy Diamond Cuts

Spicy diamond cuts recipe has different names such as Maida khara biscuit, or Kala Kala. This is an easy and simple snack, made with plain flour and spice powders. Diamond cuts are traditionally made sweet for festivals like Diwali. Spicy version is a good choice for a tea time. We can also use wheat flour for this recipe but that’s won’t be crispy like maida flour.

Ingredients Spicy diamond cuts

Spices to Grind

Black pepper – 1 tsp
Cumin seeds – 1 tsp
Garlic – 3 pods

Dough

All purpose flour – 2 cups
Rava (semolina) – 2 tbs
Chilli powder – 1 tsp
Hing – 1/2 tsp
Sesame seeds – 1 tsp
Butter – 1 tbs
Curry leaves – 1 spring 
Salt as needed 

Directions

Pre-Preparation

Grind the pepper, cumin and garlic to a fine paste

Dough Preparation

Take flour into a mixing bowl. 
Add all the ingredients including the ground spices. 
Mix everything well together and add water little by little (needs approximately little more than 1/2 cup water).
Knead the dough softly for at least 5 minutes. 
Cover the dough and let it rest for 10 minutes.

Diamond Cut

Separate the dough into 10 equal parts. 
Make the dough into balls. 
Roll out the ball into thin circles. 
Keep all the rolled out dough in between parchment paper.
Start cutting the circle into diamond shapes as shown in the picture. 
Heat oil in a frying pan in low medium flame. 
Drop the diamond cuts when the oil is ready.
Take out the crispy diamonds when it cooked completely. 
Maida khara biscuit ready.
