Simple Veg Pulav recipe for beginners

வெஜ் புலாவ் – Veg Pulav

Veg pulav is a simple one pot rice recipe. Whenever I want to prepare a quick lunch or want to pack lunch for kids, this is my first choice. This is a good healthy option to make kids eat veggies. Empty salna, kathirikkai kothusu are good side dishes for this simple white Vegetable pulav.

Ingredients for Veg Pulav

Basmati rice – 1.5 cups
Oil – 1.5 tbs
Ghee – 1 tbs
Cinnamon stick – 1 
Cardamom – 3
Cloves – 5
Bay leaves – 2
Fennel seeds – 1/2 tsp
Big onion – 1 (cut lengthwise)
Ginger garlic paste – 1 tsp
Green chilli – 3
Kasturi methi – 1/2 tbs
Beans – 10-15
Carrot  – 1
Potato – 1
Cilantro – 1 tbs
Peas – I/2 cup
Salt as needed

Directions

Pre-Preparation

Soak the rice for 30 minutes.

Saute

Heat oil and ghee in a pressure cooker. 
Add the whole spices (Fennel seeds, cardamom, cinnamon, cloves, bay leaves) and sauté.
After sautéing the spices, add onion, ginger garlic paste and green chilies. 
Continue sautéing and add veggies (carrots, beans, potatoes and peas).
Drizzle some salt then mix everything well.
Cover the cooker with lid and let the veggies to cook for 5 minutes in low flame.

Cook Pulav

Drain the water from soaked rice and add it in the cooker.
Mix the rice and veggies carefully without breaking the rice. 
Crush the kasuri methi and drizzle over the rice.
Heat 2.5 cups of water separately.
Pour the boiling water into the cooker.
Adjust the salt level and add chopped cilantro. 
Give a final mix and close the pressure cooker. 
Put on the weight and pressure cook for 5-8 minutes in medium low flame.
Switch off the flame after one whistle.
Vegetable Pulav ready

Notes

Use 3 cups of boiling water if you want more soften rice.
