சாம்பார் (Sambar)
Sambar / சாம்பார் is a traditional south indian recipe and very easy to make if you follow step by step instructions given here with detailed pictures
Ingredients for Sambar
Toor dal – 150grm (3/4 cup)
Turmeric powder – 1/4 tsp
Oil – 2 tbsp
Hing – pinch
Mustard seeds & urad dal – 1/4 tsp
Red chilli – 2-3
Masala – 1 tbsp
Red chilli powder- 1 tbsp
Black pepper powder – 1 tsp
Cumin powder – 1 tsp
Small Onion – 5 or Big onion – 1
Brinjal – 3 medium size
Tomato – 2 medium size
Drumsticks – 1
Carrot – 1
Radish – 1 (Optional)
Curry leaves – 1 spring
Cilantro for garnishing
Salt as needed
Directions
Take a pressure cooker and add the toor dal then wash it
Now add hing, turmeric powder and a drop of oil
Pour enough water to completely immerse the dal
Close the lid then put on the weight
Pressure cook the dal in medium flame for 5 whistles
Chop onion and all the other veggies.
In the mean time take a Wok (kadai) & pour oil
Add mustard seeds & urad dal , curry leaves, red chilli
After seeds cracked, add chopped onion
Stir the onion until that turns to golden brown
Now add chopped tomato and stir it until mushy
Then add all the spices masala, red chilli powder, pepper powder, cumin powder and some salt
Add all the chopped veggies and give a good mix
Add this mixer to the cooked dal then pour 2 – 3 cups of water
Check the salt level and adjust the consistency
Cover the lid and pressure cook the sambar for one whistle
After releasing the pressure garnish with cilantro
Sambar ready.
Notes
Don’t add too much of water to pressure cook the dal, lots of water will come out when cooking
You may add mango into this sambar, if you’re adding mango, reduce one tomato to this recipe
You may add cilantro when you’re adding veggies
If you don’t like pressure cooking vegetables just close with lid and allow to cook but beware of water level
