ரவை பாயாசம் – Rava Payasam
Rava payasam is one of the payasam which is easy to prepare with less ingredients. Usually I prepare paruppu payasam or paal payasam but for a change I wish to try some other variety. I tried this paayaasam recently and after trying this ரவா பாயாசம், it become one of my favorite.
Ingredients for Rava Payasam
Rava – 1/4 cup
Milk – 2 cups
Sara paruppu – 3 tbs
Sugar – 5 tbs
Cashew nuts – 15
Dry grapes – 10
Saffron – 10-15 strings
Cardamom – 3
Ghee – 1 tbs
Directions
Heat ghee in a pan then fry cashews and dry grapes.
Take out the fried cashews and dry grapes when cashews changes color to golden brown.
Add the ravai and roast that until color changes.
Pour the milk in the pan now and mix well.
Let the mixture boil until bubbles started.
Add 1.5 cups of water and add saffron and mix the milk.
Cook for 2 minutes, add saraparuppu then continue to cook the paayasam
The milk color starts to change now.
Add sugar then mix well.
Continue to boil the mixture to let it thicken.
Finally add the fried cashews, dry grapes and cardamom powder.
Give a gentle mix.
Switch off the flame.
Rava payasam ready.

Pour Ghee in a pan, heat in medium flame 
Fry cashews ad dry grapes 
Color changes to golden brown 
Take fried cashews, dry grapes out in a bowl 
Now add rava in the remaining ghee 
Mix the rava well 
Fry rava little until color changes 
Rava color changes to golden brown 
Now pour 2 cups of milk 
Mix milk and rava well 
Boil in high flame until bubble comes 
Pour 1.5 cup water 
Add saffron 
Saffron added 
Also add saraparuppu 
Let the mix boil for 2 minutes 
Let it cook in high flame 
Milk color started to change 
Now add sugar 
Mix well and continue to cook 
Milk thickens now 
Now add fried cashews and dry grapes 
Also add cardamom powder and gently mix 
Transfer the payasam to a bowl 
Serve Payasam
