வாழைக்காய் பஜ்ஜி (Plantain Bajji)
Plantain Bajji is one of the very popular street side snack in Tamil Nadu. Very simple and easy to do snack dish for a nice evening. Bajji’s are made using different types of vegetables. Plantain Bajji is a perfect snack for rainy days.

Ingredients for Plantain Bajji
Plantain – 2
Besan flour – 2 cup
Pepper powder – 1 tsp
Cumin powder – 1 tsp
Hing – 1 pinch
Baking soda – 1 pinch
Chilli powder – 3 tsp
Salt as needed
Oil for frying
Directions
Remove the skin of the plantain.
If you prefer smaller bajji, cut into two pieces.
Slice the plantain into thin slices by knife or slicer.
Mix all the ingredients except oil & plantain.
Add water little by little and prepare the batter.
Adjust salt, spice level if needed.
Heat oil in a pan.
Dip the plantain slices into the batter.
Let excess batter drop out.
After well coated with the batter fry in hot oil.
Flip the bajji and allow that to cook both sides.
Take out when done.
Continue until all plantain is complete.
Serve bajji with coconut chutney.
Notes
Make sure the oil is enough hot before start frying.
Use enough oil that completely immerse the bajji for best results.
Avoid using ripen plantain for bajji preparation.
Don’t prepare the batter watery otherwise bajji will observe more oil.
