பாகற்காய் புளிக்குழம்பு (Pavakkai Pulikulambu)
Pavakkai is good for health but it’s bitter taste make some people to stay away from that. Pavakkai pulikulambu reduce the bitterness and add sourness to the pavakkai. Sesame oil add extra flavor to the kulambu.
Ingredients
Pavakkai – 200g
Small onion – 1/4 cup
Garlic – 10-15 pods
Fenugreek seeds – 1/4 tsp
Sesame oil – 1/4 cup
Mustard seeds & urad dal – 1/4 tsp
Curry leaves – 1 spring
Masala – 1.5 tbsp
Chilli powder – 1 tsp
Coconut – 2 big pieces
Turmeric – 1 pinch
Salt as needed
Pre-preparation
Wash the pavakkai and cut it into medium size pieces.
Take a pan and add the chopped pavakkai.
Stir fry the pavakkai until partially cooked.
Grind the coconut and extract milk from that.
Directions
Take a pot and pour oil then heat it.
Add the mustard seeds and urad dal.
After the seeds cracked add the curry leaves.
Now add the chopped onion and garlic.
Stir fry them until golden brown.
Add the fried pavakkai then add the spices (masala, chilli powder, turmeric and salt).
Pour the tamarind extract and coconut milk.
Check the sourness, salt level and adjust the water level.
Cover the pan and cook the gravy until the garlic fully cooked in full flame.
Reduce the flame into low and cook until oil oozes out.
Pavakkai pulikulambu ready.
Serve the kuzhambu with rice and papad.
