பருப்பு போளி – Paruppu Poli
Paruppu poli/ Puran poli is a sweet recipe, which is originated from Maharashtra. Poli is a flatbread stuffed with jaggery & dal. Original authentic recipe uses jaggery but now a days some people uses white sugar/ brown sugar as an alternate. If you carefully follow the steps, you will definitely get soft poli. There are some variations in the poli stuffing too.
Ingredients for Paruppu Poli
Maida/ All purpose flour – 1.5 cups
Channa dal – 3/4 cup
Sugar – 1 cup
Cardamom – 4
Sesame oil – 5 tbs
Ghee – for applying
Turmeric powder – pinch
Salt – pinch
Directions
Dough Preparation
Add all purpose flour, turmeric powder & salt in a mixing bowl.
Knead the flour by adding water little by little.
Check the consistency as shown in the picture.
Pour the oil over the dough.
Let it rest for 2 hours.
Stuffing Preparation
Rinse the channa dal and soak it in water for 2 hours.
Add 1 cup of water to channa dal and pressure cook for 15 minutes in medium flame.
Filter the water and let the cooked dal to cool down completely.
Grind the dal into fine paste.
Add sugar and cardamom in a blender jar.
Grind it into fine powder.
Heat a pan and add the ground dal paste and sugar powder mix.
Stir the mixture in medium heat until that thickens.
Switch off the flame and make the mixture into small balls (when you can handle the heat).
Rolling
Take some dough and make it flat.
Add the stuffing ball and close it (check the picture).
Dust it with the flour and roll it carefully.
Prepare Poli
Heat dosa pan and set the flame into medium.
Add the rolled poli and apply little bit of ghee on both side.
Cook until the color changes and cook other side as well
Cook all the poli in the same way.
Paruppu poli ready.
Serve the poli as evening snack.
Tips
I used turmeric powder as food color, you may use food color itself for that.
