Spicy Milagai Chutney for Idly and Dosa

மிளகாய் சட்னி – Milagai Chutney

Milagai chutney is a spicy side dish for Idly, dosa and paniyaram. Whenever I think about milagai chutney my ayyamma (grandma) comes to my mind. My pethaya (grandpa) always like spiciness in food, especially he loves to eat idly with milakai chutney. My grandma grind the chutney in traditional grinding stone. She gives extra oil for me to tolerate the spiciness. I’m so happy to share the same varamilakai chutney recipe here.

Ingredients for Milagai Chutney

Red chilli – 15
Garlic – 10 to 12 cloves
Tamarind – 1/2 tbs
Small onion – 12 mini or 5 big
Sesame oil – 1 tbs
Salt as needed

Directions

Dry roast the red chilli and tamarind in low flame. 
Grind the roasted dry chili without adding water.
When it turns to powder, drizzle little bit of water and continue grinding. 
Now add garlic and smash that first.
Then add small onion and smash that too.
Grind the ingredients and drizzle water as needed.
Finally add the tamarind and stone salt.
Continue grinding until the mixture becomes fine paste. 
Take out the chutney from the grinding stone. 
Add the sesame oil and mix well.
Milagai chutney ready. 
Serve milakai chutney with idly or dosa.

Notes

This is a traditional recipe, that’s why I used grinding stone for grinding; if you want to use mixie that also works well with the recipe.
According to your spice level adjust the oil.
