Broccoli Cheddar Soup

Broccoli cheddar soup is one of my favourite soup. I’m addictive to Panera bread’s Broccoli cheddar soup. This soup is made with fresh broccoli, carrot and lots of cheese. My whole family loves to eat broccoli in any form, so I use to prepare this soup frequently. It’s high vitamin C content boosts the immune system and promotes collagen, wound healing and iron absorption.

Ingredients for Broccoli Cheddar Soup

Butter – 1/4 cup + 1 tbs
Onion – 1/2 chopped
All purpose flour – 1/4 cup
Milk – 2 cups
Chicken stock – 2 cups
Broccoli florets – 1.5 cups coarsely chopped
Carrot – 1 cup (match stick cut)
Celery – 1 stock (optional)
Shredded sharp cheddar cheese – 2.5 cups
Salt and ground pepper as needed

Directions

Heat 1 tbs of butter in a pan.
Add the chopped onion and saute until it turns golden brown.
Heat a saucepan and add 1/4 cup of butter.
Switch the flame into low and add flour little by little.
Saute the flour until it dissolves completely.
Add milk little by little and mix.
Now add chicken stock and mix well.
When the mixture starts boiling, add the sautéed onion, broccoli, carrot and salt.
Let the veggies to cook for 5 minutes.
Now add the shredded cheese and ground pepper.
Broccoli cheddar soup ready.
Serve the soup in a bowl.

Notes

I don’t like celery, so I never use it in my recipe. If you want to use that, add when you’re adding veggies.
I used shredded cheese, you can get bar and shred or cut into pieces to use it as well.
If you are a vegetarian and want to try this soup, use veg stock instead of chicken stock.
