மெது வடை (Medhu Vada)

Medhu Vada is also called uluntha vadai made from urad dal, very famous in southern part of India. For a crispy and soft vadai, the consistency of batter is important. Here I am giving a detailed step by step instruction for making batter easily. Once batter is ready, anyone can make hotel quality soft and crispy medhu vadai and here is the recipe for you.

Ingredients for Medhu Vada

Urad dal – 1 cup
Salt
Onion finely chopped – 2 tbsp
Curry leaves
Green chili – 2
Makes 20 big vada or 30 small vada

Directions

Process 1:

Soak urad dal for 2hrs.
Wash the dal and drain excess water and put it in the grinder.
Add enough salt in the beginning of grinding, so that we can add right amount of water.
Sprinkle water for every 5 to 10 minutes.
Grind dal for 45 – 50 minutes.
Mix all the other ingredients to the batter and mix it well. Batter is now ready.

Process 2:

Take damp cloth, vessel for shaping vada and little water in a bowl.
Switch on the stove and heat oil in a frying pan.
Take the batter, shape it and put in the oil.
Wait for a minute and flip it.
Take it out after a minute and it will look like golden brown when it is done.
Check and adjust the flame if you notice batter uncooked inside.
Medhu vadai is now ready.
Serve vadai with coconut chutney!

Notes

If Vada is not crispy, sprinkle little water.
If your kids don’t like chilli and onion in the vada, just grind it with the dal. Alternately, you can use whole black pepper also.
For best results grind the dal just before frying.
