Karupatti Mittai Recipe: A Sweet Southern Delight

கருப்பட்டி மிட்டாய் – Karupatti Mittai

Karupatti Mittai is an authentic recipe of southern part of Tamil Nadu. In our area we mostly call that as ”sothu mittai – சோத்து மிட்டாய்“. This mittai has three different varieties based on the dipping used, they are seeni mittai சீனி மிட்டாய், jaggery mittai and Karupatti mittai. After a long struggle I got the exact taste, I’m very happy to share this recipe here.

Ingredients for Karupatti Mittai

Rice flour – 1 cup
Urad dal powder – 1.5 tbs
Idly batter – 1 tbs
Oil for frying

For Dipping

Sugar/ Karupatti/ Jaggery – 1.5 cups

Directions

Fermentation

Take a mixing bowl and add rice flour, urad dal powder and idly batter.
Mix everything together by adding little bit of water.
Make the batter as same as idly batter consistency.
Keep the batter in warm place to ferment for 4 hours.

Syrup Preparation

Take a kadai and add crushed Karupatti (Indian palm sugar).
Pour little water, just enough to immerse the Karupatti.
Boil the Karupatti until it completely dissolves.
Filter the Karupatti syrup and pour back to the kadai.
Heat the syrup until it reaches the sticky consistency.
Change the flame into low and keep the syrup warm.

Frying and Dipping

Fill the batter in a ziplock cover without any air.
Cut the ziplock cover’s edge.
Heat the oil in medium low flame.
Press the ziplock bag and make the shapes as shown in picture or make your own shapes.
Fry the mittai until it changes into golden brown color.
Take out the mittai and dip it in the syrup.
Turn the mittai both sides to allow the syrup to get into the mittai.
Take out the mittai from syrup.
Karuppatti mittai ready.

Notes

Jaggery mittai is also follow the same process as we did for karupatti mittai.
For seeni mittai, we don’t need to filter the sugar syrup.
If you want flavour in your mittai, you may add sukku for jaggery mittai and ginger paste for Karupatti mittai.
During the frying time, the flame must be low otherwise you can’t press the batter into oil.
