Karupatti Kuli Paniyaram

கருப்பட்டி குழி பணியாரம் (Karupatti Kuli Paniyaram)

Karupatti kuli paniyaram is a ball shaped dumpling made with fermented urad dal and rice batter (Idly/dosa batter). To make kuli paniyaram, fermented batter is poured to a special pan called paniyaram pan. This is one of the famous traditional South Indian recipe. Here I’m going to make this paniyaram with Karupatti . Karupatti (Palm sugar) is good for health and good quality Karupatti is prepared in my hometown mamsapuram, which is located near Srivilliputhur.

Ingredients for Karupatti Kuli Paniyaram

Idly/dosa batter – 1 cup
Karupatti – 1 cup (crushed)
Oil – as needed

Directions

Take the Karupatti in a pan and add 1 tbsp of water
Heat the Karupatti in low flame until it completely dissolves
Filter the Karupatti syrup into the idly/dosa batter and mix well
Heat the paniyaram pan in low medium flame
Add a drop of oil in each hole
Pour the batter into each hole up to 3/4 level
After 30 seconds pour some oil around every paniyaram
Once the edges of the paniyaram become hard (after 2 minutes) flip every paniyaram carefully
After 2 minutes take out all the paniyaram
Karupatti paniyaram ready

Notes

Cook the paniyaram in low medium flame (number 4)
When you pour the batter into the hole you must hear ssh sound, then only your pan heat is ready to cook
When you’re using idly making consistency batter add some water and change that to dosa batter consistency, then add the Karupatti syrup
Don’t need to add water if you’re using dosa making batter consistency for this recipe
