கம்பு தோசை (Kambu Dosa)
Kambu dosa is a healthy tiffin recipe which is made with pearl millet and urad dal. Pearl millet also known as Bajra is rich in essential compounds like protein, fibre, phosphorus, magnesium and iron. This helps keep heart healthy, reduce blood pressure and LDL (bad cholesterol).
Ingredients for Kambu Dosa
Ingredients for batter
Pearl millet/ kambu – 2 cups
Urad dal – 1/2 cup
Salt
Directions
Prepare batter
Soak the millet and urad dal in water separately for at least 3 hrs.
Rinse the urad dal with water and grind it for 50 minutes in grinder.
Drizzle water in every 10 minute intervals.
Take out the batter into a bowl.
Rinse the soaked millet and grind it.
Grind the batter into semi coarse paste by adding water.
Take out the batter into the urad dal batter pan.
Add salt and mix the batter with hands until everything well mixed.
Keep the batter in warm place for 6-8 hours to ferment.
Batter ready.
Prepare Dosa
Take the fermented batter into a mixing bowl.
Pour water and mix the batter and make it for dosa consistency.
Heat dosa pan and scoop batter in a ladle.
Pour the batter over the pan and spread into thin circle shape.
Drizzle oil around the dosa.
Flip the dosa when the color changes.
Take out the dosa when the other side cooked.
Kambu dosa ready.
Serve the dosa with sambar and chutney.
Notes
You may grind the batter in mixie too.
In mixie the batter preparation time is less but in grinder, we can get better taste.
You can prepare crispy as well as soft dosa with this batter.
