பால் கொழுக்கட்டை (Paal Kolukkattai)

Paal kolukkattai is a traditional South Indian sweet recipe, which is made with rice flour, coconut milk and jaggery. Easy to prepare and quick time recipe. This recipe is prepared usually to celebrate Tamil new year. Jaggery is one of the major sweet item offered to God on Tamil new year.

Ingredients for Paal Kolukkattai

Rice flour – 1/2 cup + 1.5 tbs
Jaggery – 1/2 cup
Thick coconut milk – 1/2 cup 
Thin coconut milk – 1/2 cup
Shredded Coconut – 1/2 cup
Salt – one pinch 
Cardamom – 2

Directions

Prepare Dough

Boil water in a pan until bubbles started to come. 
Transfer rice flour to a mixing bowl. 
Pour boiling water little by little to mixing bowl. 
Knead the dough with back end of the spatula as shown in picture. 
Add 2 tbs of shredded coconut and knead again. 
Dough ready now.  
Pinch a little amount of dough and make small balls.

Prepare jaggery water and other items

Add the jaggery in a pan then pour 1 tbs of water and switch on the flame. 
Switch off the flame when the jaggery completely dissolved in water.
Jaggery water ready! 
Take 1.5 tbs rice flour in a bowl.
Pour water and mix well to make rice flour water.
Crush cardamom to fine powder.

Prepare Kolukattai

Boil 1.5 cups of water in a pan and add rice balls.
Cook the balls for 5 minutes in high flame. 
Pour the filtered jaggery water, thin coconut milk and shredded coconut into the rice balls pan.
Cook again for 5 minutes.  
Now add rice flour water and cook until it thickens.  
You can stop at the consistency you prefer.
Switch off the flame now and add crushed cardamom, thick coconut milk. 
Gently give a mix.  
Pal Kozhukattai ready.
