கல்கண்டு சாதம் (Kalkandu Sadham)
Kalkandu sadham is sweet and also a variety rice which is prepared with milk, sugar candy and raw rice. This is also called as kalkandu Pongal, sugar candy rice. This is similar to Sarkkarai Pongal but it’s easier to prepare and this recipe need less amount of ghee. This kalkandu satham is one of the best option for baby shower and offering in poojas.
Ingredients for Kalkandu Sadham
Raw rice – 1/2 cup
Milk – 2 cups
Rock sugar candy / Kalkandu- 3/4 cup
Ghee – 2 tbs
Cashews – 1 tbs
Raisins – 1 tbs
Saffron – 4 strings
Directions
Soak the raw rice for 30 minutes in water.
Grind sugar crystal into fine powder.
Rinse the rice in water and transfer to a pressure cooker.
Pour milk into the pressure cooker and keep flame full.
Close the cooker with lid and put weight when pressure comes.
Change the flame into low and cook until one whistle.
Heat a pan with ghee then add cashews and raisins.
Sauté them in a low flame until turns into golden brown color.
Release the pressure of the cooker and open the lid.
Transfer the rice into ghee pan and stir well.
Add rock sugar candy and saffron into the cooked rice and stir little.
Mash the rice as much as possible with spatula.
Switch off the flame.
Kalkandu sadham ready.
Notes
Must soak the rice before cooking otherwise it won’t cook completely.
I like the flavor of saffron, so I avoid cardamom for this recipe. You may use both or use your favorite.
You can add sugar crystals without grinding as well.
Also if you prefer, mash rice in cooker and add cashews into cooker itself.
