நெய் உருக்குவது (Clarified butter / Homemade Ghee)
Homemade Ghee is a healthy option and a very simple recipe. The preparation of clarified butter is very simple and easy. If you get access to drumstick leaves, use that because it gives great flavor to ghee and also tastes better.
Ingredients for Homemade Ghee
Butter – 1/2 kg
Drumstick leaves – 1/2 cup
Directions
Take butter in a pan and heat that in full flame.
Remove stems from the drumstick leaves and wash it.
There are four stages in this process.
In first stage, butter makes dense bubbles.
During second stage, the bubbles will reduce and you can see the clear liquid.
During third stage, bubble started to form again.
In fourth stage, dense bubble will come again and try to come out of the vessel.
This is the final stage and now add the drumstick leaves.
If the leaves will crack with big sound you are doing it in a right way.
Switch off the flame and filter the ghee in clean glass bottle
Ghee is ready; Store the ghee in room temperature.
Take the filtered crispy leaves and remaining ghee in the pan and mix it with hot rice.
Mix well and serve hot.
This ghee rice tastes yummy and healthy too. Kids will love it.
Notes
After the fourth stage switch off the flame and take pan into the sink and add the drumstick leaves to avoid the ghee popping into your stove.
You can replace drumstick leaves with curry leaves.
Don’t reduce the flame while cooking.
