தேங்காய் சாதம் (Coconut Rice)

Coconut rice is a variety rice prepared with coconut flakes. தேங்காய் சாதம் is an easy to prepare recipe. In baby shower function generally people prepare five different rice varieties. In this list, தேங்காய் சாதம் is my favorite one. Fresh shredded coconut gives nice aroma and taste.

Ingredients for Coconut Rice

Cooked rice – 2 cups
Shredded coconut – 1 cup 
Mustard seeds & urad dal – 1/4 tsp 
Curry leaves – 1 spring 
Channa dal – 1/2 tbs
Cashews – 1 tbs
Dry red chilli – 3
Ginger – 1 tsp (chopped)
Ghee – 1 tsp 
Oil – 1 tsp 
Hing – 1 pinch 
Salt as needed 

Directions

Heat oil and ghee in a pan.
Add mustard seeds & urad dal, channa dal.
After the seeds cracked add curry leaves. 
Once the leaves pops, add red chilli and cashews. 
Saute little and add hing and salt and mix well.
Add the shredded coconut and sauté for a minute 
Finally add the cooked rice and mix well, switch off the flame. 
Coconut Satham ready. 
Serve the rice with sambar and chutney. 

Notes

Don’t over roast the channa dal. 
Also don’t over sauté the coconut, that gives special taste.
If you are packing this variety rice for outdoor trip, roast the coconut until moisture leaves.
