கொத்தமல்லி சாதம் (Cilantro Rice)
Cilantro rice is one of the variety rice which is prepared with simple ingredients like cilantro, ginger and tamarind. When I have no idea for lunch preparation, this recipe helps me. It takes very less time to prepare and this doesn’t need any side dishes.

Ingredients for Cilantro Rice
Rice – 1/2 cup
Cilantro (coriander leaves) – 1 cup (chopped)
Green chilli – 2 (chopped)
Ginger – 1/2 tbs
Tamarind – 1 tsp
Curry leaves – 1 spring
Oil – 2 tbs
Mustard seeds & urad dal – 1/4 tsp
Channa dal – 1/2 tbs
Dry red chilli – 2
Hing – 1/4 tsp
Cashews/ peanuts – 1.5 tbs (optional)
Salt as needed
Directions
Cook the rice and let it cool down.
Rinse the cilantro in water and chop into small size.
Add cilantro, tamarind, green chilli, ginger and salt into a blender jar.
Blend the ingredients into fine paste.
Heat oil in a pan and add mustard seeds, urad dal, channa dal.
After the seeds cracked add curry leaves.
Once the leaves pop, add dry red chilli and cashews.
Sauté a little and add hing then mix well.
Pour the ground cilantro paste then stir for a minute.
Finally add the cooked rice and mix well until the rice well coated with cilantro paste.
Switch off the flame.
Coriander rice ready.
Notes
Cooking 1/2 cup of rice gives 1.5 cup cooked rice.
