ஆட்டு மூளை வறுவல் (Brain Fry)
Ingredients
Brain – 4
Small onion – 1 cup (chopped)
Ginger garlic paste – 1 tbs
Chilli powder – 1 tsp
Pepper powder – 1/2 tsp
Cumin powder – 1/2 tsp
Turmeric powder – pinch
Curry leaves – 1 spring
Oil – 2 tbs
Salt as needed
Directions
Clean the brain in turmeric water
Remove the outer silky layer and tiny veins
Cut one brain into 3 parts
Take a pan and add oil then add chopped onion, ginger garlic paste and curry leaves
Stir everything well until onion turns into golden brown
Now add all the spices and salt then stir well
Add the sliced brain pieces then cover the pan and cook in medium low flame
Don’t stir the brain for 8 minutes
After 8 minutes turn the brain into other side and cook for another 8 minutes
Now stir carefully until all the spices well coated with the brain pieces
Cook the brain for 5 minutes in very low flame
Brain roast ready

Take brain in a bowl 
Add water and turmeric powder 
Wash and remove outer layer 
Remove vein 
Remove any bone attached 

Cut in to 3 or 4 pieces 
Take a pan and add oil 
Add onion when oil heated 
Add curry leaves and ginger garlic paste 
Golden fry 
Add all spices 
Mix well 
Add brain and cook for 8 minutes with lid covered in medium low flame 
Turn side and cook another 8 minutes 
Give a good gentle mix now 
Cook for another 5 minutes in low flame 
Brain Fry ready
