பீட்ரூட் பொரியல் – Beetroot Poriyal
Beetroot Poriyal is a healthy side dish which we can easily prepare in less time. பீட்ரூட் have lots of health benefits, such as vitamin B9, manganese, potassium, iron and vitamin C. It’s also a great source of fiber. Beetroot poriyal is one of the best match for paruppu, sambar rice and vathakuzhambu.

Ingredients for Beetroot Poriyal
Beetroot – 200g
Coconut – 1/2 cup (chopped)
Small onion – 1/2 cup (chopped)
Green chilli – 2-4
Dry red chilli – 5
Channa dal – 3/4 tbs
Urad dal – 1 tbs
Oil – 4 tbs
Mustard seeds – 1/4 tsp
Cumin seeds – 1/4 tsp
Hing – 1/2 tsp
Curry leaves – 1 spring
Cilantro for garnish (optional)
Shredded coconut for garnish (optional)
Salt as needed
Directions
Peel the skin off of the beetroot and slice into bite size pieces.
Boil the beetroot with salt and water until 80% cooked.
Crush the green chilli, grind the coconut into fine paste by adding water.
Heat oil in a pan and add mustard seeds and cumin seeds.
After the seeds cracked, add curry leaves.
Once leaves pops, add channa dal, urad dal and dry red chilli.
Sauté them for a minute and add chopped onion.
Stir fry the onion until the color changes.
Add salt, hing and then add ground coconut paste.
Mix everything well and add boiled beetroot.
Stir the beetroot until the spices completely coated all over.
Switch off the flame and garnish with shredded coconut and chopped cilantro.
Beetroot poriyal ready.
Serve the poriyal as a side for rice and sambar.
Notes
I used sesame oil for this recipe but coconut oil flavor gives better taste.
Don’t over cook the beetroot.
You may increase the coconut amount for this recipe.

Once seed crack, add curry leaves 
Once leaves pops, add urad dal and channa dal 
Mix well 
Add red chili 
Also add crushed green chili and mix 
Now add chopped onion 
Saute until color changes 
Now add hing and salt 
Give a mix 
Add ground coconut 
Mix everything well 
Filter water out of boiled beetroot 
Add it in the pan 
Mix everything well 
Switch off flame and add shredded coconut 
Mix well 
Garnish with Cilantro
