சாம்பார் (Traditional Sambar)
Ingredients
For Tempering
Oil – 2-3 tbs
Mustard seeds & urad dal -1/4 tsp
Cumin seeds – 1/4 tsp
Red chilli – 2
Curry leaves – 1 spring
Other Ingredients
Sambar Masala – 3 tbsp
Toor dal – 1 cup
Small onion – 7
Tomato – 1
Carrot – 1
Radish – 1/2 ( optional )
Brinjal – 3
Drumstick – 5 pieces
Tamarind – small lemon size
Salt as needed
Directions
Prepare Dal and Tamarind paste
Wash toor dal then take that in a pressure cooker
Add turmeric, hing, 2 drops of oil to the dal
Pressure cook the dal for 5 whistle in medium flame
Soak the tamarind in water and take extract from it.
Prepare Sambar
On a separate pan, add oil, mustard seeds, urad dal, cumin seeds
After the seeds cracked, add curry leaves, red chilli and onion
Stir the mix and fry it until golden brown
Now add tomatoes and stir the mix until tomatoes become mushy
Add the sambar masala and all the vegetables, and mix thoroughly
Pour the tamarind pulp, salt and water
Allow the mixer to boil in high flame until the vegetables cook.
Now combine the vegetable mixer into cooked dal in the pressure cooker
Mix the dal and cooked vegetables thoroughly – Sambar is almost ready
Bring sambar to boil for a minute and switch off the flame
Garnish with cilantro
Sambar is ready
