வெண்டைக்காய் வதக்கல் (Vendakkai Vathakkal)
Ingredients
Vendakkai – 1/4 kg
Green chilli – 2
Small onion – 3
Mustard seeds & urad dal – 1/2 tsp
Curry leaves – 1 spring
Oil – 1 tbsp + 1 tsp
Salt as needed
Directions
Cut the vendakkai into small pieces
Spread the vendakkai in a big plate
Let the vendakkai to dry for 1 hr in sunlight or inside home for at least 6 hrs
Take a non stick pan and add vendakkai, salt, 1 tbsp oil
Stir occasionally until the vendakkai fully cooks
Take a small pan and pour 1 tsp oil in medium flame
Then add mustard seeds & urad dal; wait until crack
Then add curry leaves and chopped green chilli
Add the tempered spices into the cooked vendakkai
Vendakkai vathakkal ready
Notes
If you don’t want dry the vendakkai, instead of sun dry, pour some lemon juice to remove the stickiness of vendakkai
