வெஜிடபிள் கட்லெட் (Vegetable Cutlet)

Vegetable Cutlet is one of the pan fried delights, that are easy to make for a quick evening snack. It is a snack originating from the Indian subcontinent. It is made out of boiled potatoes, peas, vegetables and various curry spices.
Since it is not deep fried, it is a healthy snack option.

Ingredients

Potato – 3 medium size
Peas – 2 tbs
Green beans – 4 – 5
Carrot – 1
Green Chilli – 1
Ginger Garlic paste – 1 tbs
Cilantro – 1 tbs chopped
Oil – 2 tbs + frying
Chilli Powder – 1 tbs
Turmeric Powder – 1/4 tsp
Garam Masala – 1 tbs
Lemon – 1/2
Maida – 4 tbs
Breadcrumbs – 2 tbs + dusting
Salt as needed

Directions

Preparing Stuffing

Slice the potato with skin and boil it until well cooked.
Peel the skin of the potato then mash it.
Also peel the carrot skin and chop it into bite size.
Cut the beans into bite size.
Take a Idly pot and gather the veggies (carrot, beans, peas) on the Idly plate.
Cook them for 10 minutes.
Take a pan and pour oil then add the ginger garlic paste, chopped green chilli.
Sauté them for a minute then add the spices (turmeric, garam masala, chilli powder) and salt.
Mix everything and sauté in low flame.
Now add the mashed potatoes then add other veggies.
Add 2 tbsp of breadcrumbs to the stuffing.
Mix well until all the spices coated with the veggies.
Drizzle some lemon juice and sprinkle some chopped cilantro.
Give a final mix and the veg cutlet stuffing ready.

Preparing Cutlet

Take a bowl with Maida & water and mix well.
Shape the veg stuffing however you want.
Dip the veg stuffing in the Maida and dust with breadcrumbs.
Heat a pan with oil and add the cutlets.
Fry them in low medium flame until they turn into golden brown color.
Flip the cutlet into other side and fry until crispy.
Take out and place that in a paper towel to drain the oil.
Serve the veg cutlet with ketchup.

Notes

Don’t add too much vegetables it will break the cutlet.
Fry the cutlet completely in low medium flame otherwise it won’t cook inside.
Shape the cutlet with cookie cutter or you can make it with your hands.
