வாழைக்காய் வறுவல் (Valakkai Varuval)
Valakkai varuval is a spicy and tasty recipe. My kids always like this recipe. In my childhood days my mom prepare this varuval without curry powder and masala. She just prepare it with green chili. After I start cooking I modified to prepare this way and it came out well. When we use wide pan for frying, this will be fast and easy to prepare.
Ingredients for Valakkai Varuval
Valakkai – 2
Mustard seeds & urad dal – 1/4 tsp
Curry leaves – 1 spring
Masala – 1/2 tbs
Turmeric powder – 1/2 tsp
Hing – 1 pinch
Oil – 1 tbs
Pepper powder – 1/2 tsp
Cumin powder – 1/2 tsp
Salt as needed
Directions
Peel the skin off the plantain then slice it as shown in picture.
Transfer the sliced plantain into a mixing bowl.
Add the spices (masala, pepper powder, cumin powder, turmeric, hing and salt).
Toss the sliced pieces with spices until everything well coated.
Heat wide pan with oil and add mustard seeds & urad dal.
After the seeds cracked add curry leaves.
Place the plantain pieces on the pan.
After one side cooked (got crispy) turn into another side.
Cook until this side fully cooked.
Stir the plantain until every piece turned into crispy.
Crispy valakkai varuval ready.
Notes
Don’t slice the valakkai very thin.
You may use sambar masala to alternate regular masala.
If you don’t have enough space for all the plantain pieces in the pan, split and cook as 2 batches.
Don’t over crowd the pan otherwise the plantain won’t be crispy.
You may add chilli powder if you want more spicy.
