Traditional Sweet Ravai Kuzhi Paniyaram recipe

Sweet Ravai kuzhi paniyaram is an easy and quick evening snack recipe. This sweet dish is an all time kid’s favourite snack. I used ghee in this recipe, which makes the paniyaram crispy and delicious. Also ghee keeps the flavor and crispiness for a long time.

Ingredients for Sweet Ravai Kuzhi Paniyaram

Rava – 1 cup
Wheat flour – 1/2 cup
Jaggery – 1 cup
Baking soda –  1/8 tsp
Sesame seeds  – 1 tbs
Milk – 1/2 cup
Cardamom powder – 1/2 tsp
Salt a pinch
Ghee/ oil for frying

Directions

Pre-preparation

Add jaggery and water in a pan.
Heat the pan in high flame until jaggery dissolves. 
Filter the jaggery syrup.
Add the rava in a mixie jar. 
Grind the rava a little. 
Dry roast the white sesame seeds.

Batter Preparation

Transfer the ground the rava into a mixing bowl. 
Add wheat flour, roasted sesame seeds, salt, baking soda and cardamom powder. 
Mix all the dry ingredients.
Now pour jaggery syrup and milk little by little. 
Mix everything well and let the mixture sit for 10 to 15 minutes. 
Now you can notice that the batter becomes thick.
Pour some water into the batter and make it to dosa batter consistency.

Make Paniyaram

Heat the paniyaram pan with ghee in low medium flame.
Pour the paniyaram batter into the hole (kuzhi). 
Flip the paniyaram into other side once the color changes in the edge. 
Take out the paniyaram when it’s done. 
Sweet Ravai kuzhi paniyaram ready.

Notes

Do NOT prepare the jaggery syrup with string consistency. 
You may use black sesame seeds also for this recipe. 
Use oil if you don’t prefer ghee.
Fill the ghee 1/4th of the hole for rich flavor.
If you don’t want to use too much ghee, add the batter first and pour ghee around the batter.
When you’re reducing the ghee you will get the soft paniyaram not crispy paniyaram. 
Don’t completely fill hole with batter, leave a little space to expand while cooking.
