Tirunelveli Halwa

திருநெல்வேலி அல்வா (Tirunelveli Halwa)

Tirunelveli Halwa is very famous sweet and takes time and patience to prepare at home. Using my simple to follow recipe, you can easily make it at home.

Ingredients for Tirunelveli Halwa

Samba Wheat Rava (cracked Wheat) – 1 cup
Sugar – 2 1/2  cup + 1/2 cup (total 3 cups)
Ghee – 1 cup
Cashews – 1/4 cup chopped
Water – 1/2 cup + 1/4 cup

Directions

Extract Milk:

Soak wheat rava (Cracked wheat) in water for 2 hrs.
Drain the water and make smooth paste in mixie / blender.
Take a big mixing bowl, big strainer and cotton cloth.
Pour wheat paste into the cloth.
Collect the cloth ends and hold it in hand.
Strain the paste and collect milk from the mix.

Fry Cashews:

Take a pan and fry cashews in ghee. 

Prepare Sugar Syrup:

Take a big pan and small pan.
In a big pan take 2 and a half cup of sugar and half cup of water and boil that until one string consistency.
In a small pan take half cup of sugar and 1/4 cup of water and boil that until get the golden brown color (Caramel color).
Mix the small pan syrup into the big pan syrup.

Prepare Halwa:

Mix wheat milk extract into the syrup.
Set the flame to medium and continue cooking.
Stir the mix continuously and add one spoonful of ghee for every 5 mins.
Keep cooking until the mix get thick (in about 45 minutes).
When you see the ghee started coming out from the halwa, add cashews, stir once to mix cashews well and switch of the flame.
Tirunelveli Halwa ready.
