Theatre style Crispy Paneer Burji Puffs recipe

பன்னீர் பப்ஸ் – Paneer Burji Puffs

Paneer burji puffs is a popular and delicious Indian bakery style savoury snack. It is made with puff pastry sheets and paneer. Whenever I go to an Indian grocery store in a nearby town, I will always have this paneer burji puffs. We can’t go to the store very often, I decided to replicate the same puffs on my own. After trying few variations, finally I got the great result with same taste.

Ingredients for Paneer Burji Puffs

For Paneer Burji

Paneer – 200g
Onion – 1 (finely chopped)
Tomato – 1 (chopped)
Garlic – 4 – 6 pods (minced)
Oil – 3 tbs
Chill powder – 2 tsp
Cumin Powder – 1 tsp
Garam masala – 1 tsp
Green chilli – 2
Turmeric powder – 1/4 tsp
Cilantro – 1 tbs

For Puffs

Puff sheet – 2
Egg – 1 (optional)
All purpose flour for dusting
Water few drops

Directions

Prepare stuffing

Heat 3 tbs oil in a pan in medium flame.
Add onion, garlic, green chillies.
Saute them until the onion turns golden brown.
Add chopped tomatoes and saute until mushy.
Now add turmeric powder, garam masala, chilli powder, cumin powder and salt.
Saute and mix everything well together.
Shred the paneer in a shredder with small hole.
Add the shredded paneer and reduce the flame to low.
Mix the paneer with the spices until well combined and cook the paneer for 2 minutes.
Paneer burji/ stuffing ready.

Prepare Puff sheet

Preheat the oven to 350°F.
Thaw the puffs sheet according to the product’s package instructions.
Place one puff sheet in a work space.
Dust some flour over the sheet to avoid being sticky.
Roll out widthwise first and expand the sheet little bit, then roll out into lengthwise.
Fold the sheet as shown in the picture.
Cut the sheet into half and cut one more time.
Now you will get 4 small sheets.
Follow same directions for the second sheet as well.
Now you have 8 sheets ready.

Prepare Puff

Take a scoop of paneer burji and place it in one edge of the sheet.
Dip your index finger into water and tab in the edges of the sheet.
Now close the sheet and seal it by giving little pressure in the edges.
Do the same to the remaining 7 sheets.
Place a parchment paper over the cookie sheet.
Arrange the puffs in the sheet.
Crack the egg in a bowl and beat fluffy.
Dip the beaten egg with brush.
Now coat the egg over the puffs.
After the egg wash (coat), place it in the preheated oven.
Bake the puffs for 20 minutes or until the top side turns to golden brown and crispy.
Paneer puffs ready.

Notes

Coat with little bit of milk, If you don’t want egg coating.
If you want bigger size of puffs, cut one sheet into just 2 (1 sheet – 2 puffs)
