தியேட்டர் சம்சா (Onion / Theatre Samsa)
Theatre samsa is very famous in south India. In my childhood days, after school, I usually go to my dad’s school and wait for him until he finishes his sports coaching. On those days I directly go to school canteen and buy this onion samsa which tastes heavenly. Even now I remember that samsa’s taste and wanted to try it at home. I was able to get the exact taste and I am so happy to share the recipe here with you all. North Indian samosa is mainly stuffed with potato but this one is mainly stuffed with onion.
Ingredients for Theatre Samsa
Samsa sheets – 8
Onion – 3 medium size
Garam masala – 1 tsp
Turmeric powder – 1/2 tsp
Potato – 1 medium size
Hing – 1/2 tsp
Cumin seeds – 1 tsp (optional)
Salt as needed
Oil – 2 tsp + for frying
All purpose flour for sealing
Directions
Pre-Preparation:
Slice the onion into lengthwise.
Peel the skin off the potato.
Chop the potato into bite size.
Boil the chopped potato (Add salt in water while boiling).
Stir Fry:
Heat oil in a pan and add cumin seeds.
After the seeds cracked, add sliced onion.
Sauté the onion until the onion turns into golden color.
Add turmeric powder, garam masala, hing and salt and mix well.
Finally add boiled potato and give a good mix.
Stuffing:
Take a rectangle samsa sheet and fold as shown in the picture.
Mix flour and water in a mixing bowl.
Apply the flour paste on the sheet and fold again.
Fill one table spoon of stuffing.
Again apply the flour paste in the closing edges.
Close the samsa and follow the same steps for the remaining samsa.
Stuffing is done and ready to fry.
Final Fry:
Heat oil in a frying pan in medium flame.
When oil is ready, add the stuffed samsa.
Turn the samsa after a minute or when color changes.
Take out the samsa and place in a paper towel when bubbles stopped.
Samsa ready.
Serve the samsa with tea.
Notes
Don’t add more amount of potato and masala as it will spoil the recipe / taste.
Don’t over stuff the samsa as it might open while frying.
