ரோட்டுக்கடை காளான் – Roadside Kaalan
Roadside kaalan is a famous street food in TamilNadu, which is made by mushroom and cabbage. The combination of mushroom and cabbage is coated with flour and deep fried then sauté with spices and onion. This recipe is easy to prepare and very tasty too. My whole family is addicted to this recipe. This is one of the best recipe to serve as snack in the evening or as a good option for a party starter.
Ingredients for Roadside Kaalan
For Frying
Mushroom – 250g (finely chopped)
Cabbage – 250g (finely chopped)
All purpose flour – 4 tbs
Corn flour – 1 tbs
Ginger garlic paste – 1 tbs
Turmeric powder – 1 tsp
Chilli powder – 1 tbs
Garam masala – 1/2 tbs
Salt as needed
Oil for frying
Masala
Onion – 2 (finely chopped)
Oil – 2 tbs
Curry leaves – 2 spring (chopped)
Ginger garlic paste – 1 tbs
Tomato sauce – 2.5 tbs
Green chilli sauce – 1 tsp
Red chilli powder – 1/2 tsp
Corn flour – 1/2 tsp
Salt as needed
To Garnish
Cilantro (chopped)
Onion (finely chopped)
Directions
Frying
Add all the frying ingredients except oil into a mixing bowl.
Mix everything well until completely mixed (don’t add water for mixing).
Let the mixture to rest for 5 minutes.
Mushroom release little bit of water.
Knead the mixture once again gently.
Heat oil in a pan and add the mixture little by little.
Fry the mixture until golden color in medium flame.
Fry all the mixture in the same way and drain the excess oil from fried item in a paper towel.
Let them cool down completely.
Crush the fried cabbage and mushroom mixture.
Prepare Kaalan
Heat oil in a pan and add curry leaves.
Add chopped onion and ginger garlic paste.
Sauté them until color changes.
Add tomato sauce, green chilli sauce, chilli powder and salt.
Mix everything well and add corn flour with water mixture (1 tbs corn flour + 3 tbs water).
Now add 1.5 cups of water and let the mixture to boil until bubbles come.
Add the crushed mushroom and cabbage.
Mix everything well and switch off the flame.
Garnish the kaalan with cilantro and onion.
Roadside kaalaan ready.
Serve the roadside kaalan in a bowl.
