ரெட் வெல்வெட் கப் கேக் (Red Velvet Cupcake)
Red Velvet Cupcake is traditionally a red, red-brown, Crimson or scarlet-colored chocolate cake. Butter milk, butter, cocoa, vinegar and flour are the main ingredients for this recipe. Beetroot or red food coloring may be used for the color. Butter milk/ yogurt must be used in this recipe for the fluffiness. Red velvet emulco gives moisture for the cake. It took less than 30 minutes for me to prepare the cake batter.
Ingredients for Red Velvet Cupcake
All purpose flour – 3/4 cup
Butter – 1 stick (112g)
Sugar – 1/2 cup
Egg – 2
Baking powder – 1/2 tsp
Milk powder – 1 tbs
Milk – 3 tbs
Vanilla extract – 1/2 tsp
Yogurt/curd – 2 tbs
Coco powder – 1 tsp
Red velvet emulco – 2 tsp/ red food colour – 1 tsp
Directions
Pre-Preparation
Keep the butter and eggs in room temperature for 1-2 hours.
Separate the egg whites and yolks.
Powder the sugar in blender.
Prepare Batter
Place 3/4th of the powdered sugar in a mixing bowl.
Add softened butter and beat with beater.
Once butter is beaten, add egg yolk one by one and beat again.
Pour vanilla extract and milk and beat a little.
Sift flour, baking powder, milk powder and mix well with spatula.
Beat the egg whites and add remaining 1/4th powdered sugar little by little seperately.
Beat the egg whites mixture until fluffy.
Add the egg whites sugar mixture to the flour mixture.
Mix everything well and add cocoa powder, yogurt and red velvet emulco.
Gently mix everything well with spatula.
Cupcake Batter ready.
Bake Cupcake
Preheat the oven to 350° degrees Fahrenheit.
Place mini cupcake liners in the pan.
Scoop the batter into 3/4th level of the cup.
Place the pan into the preheated oven.
Bake the cake for 12 minutes or until completely cooked.
Check with tooth pick and make sure that cooked.
Red Velvet Cupcake ready.
Notes
I used 24 mini cups cake pan, if you use 12 cups pan the cooking time will take 15 minutes.
You may use condensed milk (2 tbs) instead of milk.

Prepare Batter

Ingredients 
Take Sugar in a mixie jar and blend to fine powder 
Powdered sugar 
Separate egg white and yolk 
Take powdered sugar and butter in a bowl 
Beat using beater 
Halfway through 
Continue beating until mix well 
Add egg yolk one by one 
Continue to beat 
Egg yolk is mixed well now 
Now pour milk and vanilla extract; Beat a little 
Sift milk powder and baking powder 
Also sift flour 
Sifted flour, baking powder and milk powder 
Mix well with spatula 
Beat egg white 

Egg white becomes fluffy 
Add remaining powdered sugar little by little and beat 
Fluffy egg white, sugar mix ready 
Add the egg white sugar mix to flour mix 
Mix with spatula 
Everything mixed well 
Add Yogurt and Cocoa powder 
Also add red velvet emulco and mix with spatula 
Cupcake batter ready
Bake Cake

Pre-heat oven to 350 degree F 
Place cupcake liners the pan 
Fill batter on each liner unto 3/4th 
All cupcake liners are filled now 
Once oven is ready, keep the pan inside oven 
Set timer to 12 minutes 
Cake is ready in 12 minutes 
Take the pan out 
Red velvet cupcake ready
