Rava Paniyaram

ரவை பணியாரம் (Rava Paniyaram)

Rava paniyaram is a traditional South Indian sweet. This is prepared for all special occasions. My mom prepares this paniyaaram every Diwali early in the morning. My grandma add chopped coconut pieces to this paniyaram that tastes yummy. For weddings, people surrounding Virudhunagar area use to offer this ரவா பணியாரம் to ancestors, one day before marriage as part of dinner to get blessings. This type of paniyaram is very easy to prepare and is a beginners friendly recipe. The special about this paniyaram is that it is crispy outside and soft inside.

Makes 8-10 paniyaram 

Ingredients for Rava Paniyaram

Rava / Fine Sooji – 1/2 cup
Maida / All purpose flour – 1/3 cup
Sugar – 1/2 cup
Cashews – 1/2 tbs (chopped)
Coconut – 1/2 tbs (chopped)
Oil for deep frying

Directions

Take a mixing bowl and add rava and Maida.
Pour water little by little and knead like chappathi dough consistency.
Close the bowl and let it rest for 1 hr.
Now add the sugar and knead until everything well mixed (don’t add water).
Let the mix rest again for 15 minutes.
Add coconut pieces and cashew pieces and mix well.
Heat oil in a frying pan with low medium flame (number-3).
When oil is ready pour the batter into oil with hands or ladle (using hands give best results).
Turn to other side when color changes.
Take out the paniyaram into the paper towel when bubbles stopped.
Follow the same instructions for the remaining batch.
Ravai paniyaram ready.

Notes

Don’t shred or grind the coconut, only chopped coconut tastes good in this recipe.
Don’t fry the paniyaram in high flame, it won’t be cooked inside.
