ரவை கேசரி (Rava Kesari)
Rava kesari is my 125th recipe and it is a very easy to make recipe and common sweet across India. We can make rava kesari with in 20 minutes. If an unexpected guest comes we can do this immediately. Here l’m going to give an exact combination for the rava kesari. Without fail you can get perfect consistency.
Ingredients
Rava (sooji) – 1/2 cup
Ghee – 1/4 cup
Sugar – 1 cup
Water – 1.5 cup
Cashews – 1 tbs
Cardamom – 2
Kesari powder – 1/4 tsp
Directions
Take a pan and add little bit of ghee and fry the cashews in medium flame.
Take out the cashews when it turns into golden brown color.
Start heating the water in parallel.
Now pour all the remaining ghee and add the sooji.
Fry the rava for one minute then add the boiling water little by little.
Mix the water and rava without leaving your hand until well mixed.
Now add the food color and mix well.
Add the sugar little by little and mix well without leaving your hand.
Add the roasted cashews and crushed cardamom then switch off the flame.
Rava kesari ready.
Notes
If you want exact restaurant taste, add another 1/4 cup ghee to this recipe
Don’t reduce the ghee amount, otherwise it will taste like sweet upma
Make sure to use boiling water to mix with Rava otherwise you get lumps; Taste and texture will be spoiled.

Serve in a bowl with a spoon
