Pumpkin Bread
Pumpkin Bread is an easy to make spicy bread and tastes delicious too. I got this recipe from one of my American friend. This was the first bread I made from scratch and it really came out well. My husband does not like pumpkin but after he tried our friend’s bread, he asked me to prepare it at home and we always prepares this bread during fall / Halloween season. This bread tastes spicy because of adding cinnamon and nutmeg to this recipe.
Ingredients for Pumpkin Bread
Dry Ingredients
All purpose flour – 1.75 cups
Ground cinnamon – 1/2 tsp
Baking soda – 1 tsp
Nutmeg powder – 1/2 tsp
Salt – 3/4 tsp
Sugar – 1.5 cups
Raisins – 1/2 cup
Mixed nut – 1/2 cup
Wet Ingredients
Eggs – 2
Oil – 1/2 cup
Water – 1/3 cup
Pumpkin puree canned – 1 cup
Pre-preparation
Soak the raisins in warm water
Chop the nuts into very small size pieces
Directions
Pre-heat oven to 350°
Grease butter in a 9*5 loaf pan
Sift all the dry ingredients except sugar
Take a mixing bowl and crack the eggs
Beat the eggs then add oil and beat well again
Add water and give a good mix
Powder the sugar and add to the batter then beat well
Add pumpkin puree and beat again
Add the sifted dry ingredients little by little and beat using hand mixer
Finally add the raisins and chopped mixed nuts
Mix everything well with spatula
Transfer the batter into butter greased pan
Ensure there must be 1/3 empty space in the pan
Bake the batter for 1 hour or until done
Pumpkin Bread / cake ready
Notes
You may use four 5.75 inch * 3 inch mini loaf pan to get cute small pieces of pumpkin bread
If you don’t have any loaf pan, use two 9 inch round pan or two 9 inch square pan
Don’t over fill the pan (leave 1/3rd space)
I used cashew nuts, almond, pistachio and walnut in the mixed nuts portion. You may add pecans or whatever nuts you like to this recipe.
If you don’t chop the nuts very small, you can’t cut the bread into even slices
