பொரித்த புடலங்காய் – Pudalangai Rings Fry
Pudalangai Rings fry is easy to prepare and quick time recipe. This a kids favorite recipe. My kids never like pudalangai but whenever I prepare this pudalangai fry, they finish everything completely. This side dish is a best match to serve with rice and puli kulambu.

Ingredients for Pudalangai Rings Fry
Pudalangai – 200g
Besan flour – 4 tbs
Rice flour – 1 tbs
Corn flour – 1 tbs
Chilli powder – 1 tsp
Turmeric powder – 1/4 tsp
Curry leaves – 1 spring (chopped)
Hing – 1 pinch
Lemon juice – 1/4 tsp
Salt as needed
Directions
Prepare Masala Rings
Peel off the snake guard skin.
Cut the snake guard into round slices.
Remove the inside seeds.
Add salt and snake guard pieces in a mixing bowl.
Mix well and leave the mixture for 15 minutes.
Water will come from the snake guard.
Add all the other ingredients in another mixing bowl.
Mix everything well and add the snake guard pieces (squeeze water out from the snake guard).
Coat the spice mix all over the snake guard.
Sprinkle water if needed.
Fry Pudalangai Rings
Heat oil in a pan and heat in medium high flame.
Add the spice coated pieces in hot oil one by one.
Fry that until it changes to golden brown.
Fry the remaining pudalangai in the same method.
Pudalangai fry ready.
Serve the pudalangai rings fry with rice and puli kuzhambu.
Notes
Don’t add too much water to the spice mixture, otherwise it won’t be crispy.
If the pudalangai rings are big, cut into two pieces.

Deep Fry
Heat oil in a pan in medium high Place pudalangai rings one by one Fry until color changes Turn Sides Take out when done Pudalangai Rings Fry Ready
