புடலங்காய் கூட்டு (Pudalangai Kootu)
Ingredients
Pudalangai / snake gourd – 1 medium size
Moong dal – 1/4 cup
Turmeric – pinch
Hing – pinch
Green chilli – 3
Urad dal – 1 tbs
Coconut – 1/2 cup chopped
Cumin seeds – 1/2 tbs
Ginger – 1 tsp (optional)
Salt as needed
Tempering ingredients
Oil – 1 tbs
Mustard seeds & urad dal – 1/4 tsp
Curry leaves – 1 spring
Garlic – 2 pod (optional)
Directions
Soak the moong dal for 30 mins
Peel the skin of the pudalangai and slit that into 2 pieces
Now remove the seeds inside and chop it into small pieces
Wash the dal and cook it in a pan
When dal is half cooked, add the chopped pudalangai into the pan
Cook both in high flame until well cooked
Take a separate pan and add a drop of oil, cumin seeds, urad dal, ginger, green chilli, coconut
Fry that for a minute and allow that to cool
Now take the fried ingredients into blender and grind into fine paste
Add the paste to the cooked snake gourd and dal mixer
Mix everything well and add salt
Take a small pan and add tempering ingredients one by one
Add crushed garlic into the small pan and fry until golden brown
Finally add this to the kootu
Pudalangai kootu ready
