Pista Ice Cream using Cuisinart’s Ice Cream maker

பிஸ்தா ஐஸ் கிரீம் – Pista Ice Cream

Pista ice cream is also known as pistachio ice cream. This is a popular ice cream flavour made with pistachio nuts or flavour. It’s often characterised by its distinct green color and nutty flavour. The primary flavour is derived from pistachios nuts, which contribute a rich, nutty taste. But the pista nuts have little bit of grassy flavour, so I mix cashews for more creamy flavour. I usually try different flavor for my homemade cake topping. When I tried this pista flavour cake topping, everyone liked it. At that time, I felt this combination would be great for the ice cream too. So I tried and got the awesome result.

Ingredients for Pista Ice Cream

Heavy whipping cream – 2 cups
Sweetened condensed milk – 2 cups
Cashews – 2 tbs
Pista – 2 tbs
Vanilla extract – 1 tsp
Saffron – 10 strings
Green food colour – 1 drop (optional)

Directions

I’m using cuisinart’s ice cream maker (pre-freeze model).

Pre-preparation

Keep the double insulated freezer bowl in freezer for at least 8hrs or overnight.
Grind the cashews and pistachios into coarse powder.

Mixing

Pour the heavy cream and condensed milk in a mixing bowl. 
Add the vanilla extract, nuts powder, saffron, food colour.
Mix everything well together. 

Make Ice Cream

Set up the ice cream machine. 
Start the machine and pour the mixture. 
Let the machine run for 20-25 minutes or until the ice cream texture becomes smooth. 
Transfer the ice cream into freezer safe bowl.
Keep the ice cream in the freezer for at least 4 hrs. 
Pista ice cream ready.
Serve the பிஸ்தா ஐஸ் கிரீம் ice cream for a dessert time.

Notes

If you don’t have the ice cream machine, use the hand mixer or blender (mixie) for the preparation. 
Blender won’t give the perfect texture. 
Add the nuts mixture last If you’re using the blender.
If you want more pista flavours adjust the quantity as 3 tbs pista and  1 tbs cashew.
